Do your mornings feel like a whirlwind? Try this Grab and Go Apple Berry Muesli to get your day off to a healthy start. Prepare the muesli the night before and put everything in a bowl or 2 mason jars to soak overnight. Muesli is traditionally eaten cold with a spoon. My daughter will be enjoying this nutritious breakfast on the way to her 6:30 basketball practice tomorrow morning!
- 1 heaping cup rolled oats
- 1/3 cup slivered almonds
- 1/2 an apple, finely chopped
- 1/4 cup goji berries
- 1/4 cup raisins
- 2 Tbsp. chia seeds
- 1/2 tsp. cinnamon
- 2 Tbsp. maple syrup
- 1 3/4 cups almond milk
1. Place all ingredients in a bowl and mix well.
2. Cover and refrigerate or evenly divide the mixture between 2 mason jars and refrigerate over night.
To make this a nut-free muesli, replace the almonds with 1/3 cup dried cranberries and replace the almond milk a nut-free milk of your choice.
This recipe is a slightly modified version of Alexi Bracey’s “Awesomely Delicious Muesli.”
