Walnut Brownies

Walnuts are one of the most antioxidant rich foods and are an excellent source of omega-3 fatty acids which have anti-inflammatory properties.  Walnuts are also high in B-complex vitamins and minerals such as copper, iron, manganese, zinc, calcium, and selenium. Walnuts are particularly beneficial for cognitive health and are generally regarded as an excellent “brain food”.  Walnuts are high in vitamin E which helps to keep cells protected from free radical damage. Only a handful of walnuts a day are needed to receive their powerful health benefits.

Ingredients:

3 cups walnuts

2/3 cup carob or cacao powder

2 cups shredded unsweetened coconut

1/2 – 3/4 cup pure maple syrup

1 teaspoon vanilla

raspberries (optional)

Method:

Grind walnuts in a food processor until they form a meal.  Add in coconut and process.  Add in cacao powder, maple syrup and vanilla.   Process until well combined.  Press mixture in an 8×8 glass baking dish and cover.  Chill overnight in the fridge or put it in the freezer for 2-3 hours.  Cut into desired squares and serve over pureed raspberries (remove seeds with a fine sieve) or roll into balls and serve as truffles.  Keeps well frozen.
